Pineapple, Mint and Brown Rice Noodles

Ingredients
- SALAD INGREDIENTS
- 2 square Star Anise Foods’ Brown Rice Noodles with Organic Green Tea (109mg sodium, find it in the Grocery Section – Ethnic area)
- ½ Cup Chopped Pineapple
- 1 Sliced Cucumber
- 1 Julienned Carrots
- 2 Green Onions, thinly sliced
- ¼ Cup Roughly Chopped Mint
- 1 Cup Edamame Beans
- SALAD DRESSING INGREDIENTS
- 1 Clove - Garlic, Crushed
- 1 Lime - Lime Juice
- 1 tsp - Rice Wine Vinegar
- 2 tsp - Low-sodium Tamari
- 2 tsp - Honey
Instructions
- Soak Noodles in hot boiling water for 2 mins until al dente (submerge Noodles in water completely and cover). Drain & Rinse
- Blend Salad Dressing ingredients in a food processor.
- Toss Noodles, Ingredients with Salad Dressing.
- NOTE: IF NOODLES STICK TOGETHER: simply toss with some water to separate.
