Pineapple, Mint and Brown Rice Noodles

Ingredients
  • SALAD INGREDIENTS
  • 2 square Star Anise Foods’ Brown Rice Noodles with Organic Green Tea (109mg sodium, find it in the Grocery Section – Ethnic area)
  • ½ Cup Chopped Pineapple
  • 1 Sliced Cucumber
  • 1 Julienned Carrots
  • 2 Green Onions, thinly sliced
  • ¼ Cup Roughly Chopped Mint
  • 1 Cup Edamame Beans
  • SALAD DRESSING INGREDIENTS
  • 1 Clove - Garlic, Crushed
  • 1 Lime - Lime Juice
  • 1 tsp - Rice Wine Vinegar
  • 2 tsp - Low-sodium Tamari
  • 2 tsp - Honey
Instructions
  1. Soak Noodles in hot boiling water for 2 mins until al dente (submerge Noodles in water completely and cover). Drain & Rinse
  2. Blend Salad Dressing ingredients in a food processor.
  3. Toss Noodles, Ingredients with Salad Dressing.
  4. NOTE: IF NOODLES STICK TOGETHER: simply toss with some water to separate.
