Brown Rice Noodle Salad with Grilled Eggplant and Mango

Ingredients
  • SALAD INGREDIENTS
  • 4 squares Star Anise Foods’ GLUTEN FREE Brown Rice Noodles with Org Green Tea.
  • 4 cups Eggplant, medium dice, grilled
  • ¼ cup frozen cubed Mango, thawed
  • SALAD DRESSING INGREDIENTS
  • ¾ cup Water
  • 4 tsp Rice Wine Vinegar
  • 1 tbsp Tamari
  • ½ tsp grated fresh Ginger
  • 2 cloves minced Garlic
  • 1 tsp Honey
Instructions
  1. Soak Noodles in hot boiling water for 4 minutes until Noodles are al dente.
  2. Make dressing by whisking all Dressing Ingredients in a bowl.
  3. Toss together salad ingredients. Serve.
