Chickpea Noodle Salad with Lime and Mint Vinaigrette

This is a light, fresh, delicious Vietnamese gluten free noodles salad that takes 5 minutes to make and never fails to delight.
  • 2 squares of Star Anise Foods' Gluten Free Noodles - Just Noodles
  • 1 cup of cooked chickpeas
  • 1 lime cut into wedges
  • ½ cup of chopped mint
  • ½ cucumber, thinly sliced
  • 1 red sweet pepper, thinly sliced
  • 1 clove of finely chopped garlic
  • Salt & pepper to taste
  • 1 teaspoon honey
  • 1tsp toasted sesame oil
  1. Prepare the Vietnamese Brown Rice Noodles as per instructions on the package.
  2. In a big salad bowl, squeeze the lime juice, put honey, garlic, salt, pepper, sesame oil and mix well.
  3. Add noodles, prawns, cucumber, red sweet pepper and mix through.
  4. Garnish with chopped mint
  5. Enjoy!
