Brown Rice Noodles with Broccoli in Peanut Dressing (Vegan, no oil)

Ingredients
  • ½ lb Star Anise Foods' GLUTEN FREE Brown Rice Noodles with Org Green Tea.
  • 1½ lb Broccoli
  • ¼ lb Extra Firm Tofu
  • 1½ lb Carrots
  • Dressing
  • ¼ cup Rice Wine Vinegar
  • 3 tbsp Honey
  • ¼ cup Liquid Aminos
  • 3 tsp Garlic
  • 3 tsp Ginger
  • ½ cup Natural Creamy Peanut Butter (no salt)
  • ½ cup Water
Instructions
  1. Rehydrate noodles (Soak Noodles in hot boiling water for 2 mins. Drain & Rinse to avoid noodles sticking together.)
  2. Blend dressing ingredients and set aside.
  3. Toss salad ingredients. Leave dressing separately. Dress at service.
