Gluten Free Brown Rice Noodle Salad with Creamy Lemon Chive Dressing

  • 1 package gluten free brown rice noodles with green tea
  • 2 tablespoons freshly squeezed lemon juice
  • fine sea salt
  • 1 cup light cream
  • ⅓ a cup freshly minced chives
  1. In a small jar, combine lemon juice and ½ teaspoon salt. Cover and shake until salt is dissolved. Add cream and chives; shake to blend. Season with salt. Store, covered and refrigerated, up to 1 week. Shake to blend before using.
  2. Boil noodles in water for 1:30-2 minutes.
  3. Drain noodles.
  4. Serve noodles as desired with dressing.
  5. (this also tastes great if you add some finely sliced zuchinni and carrots with it!)
