Thao’s Delicious Edamame Tofu Brown Rice Noodle Salad

  • 1 square Brown Rice Noodles with Organic Green Tea (109mg sodium, find it in the Grocery Section – Ethnic area)
  • 1 tbsp tahini
  • ½ tsp liquid aminos (180mg sodium), or 1 tsp raw coconut aminos (113mg sodium)
  • 1 small clove garlic, crushed
  • 2 oz extra firm tofu, cubed
  • 2 oz Edamame beans
  • 1 cup spinach
  1. Soak SAF noodles in hot boiling water for 5 mins. Drain.
  2. Combine noodles, tahini, 1tbsp water and stir thoroughly until tahini coats noodles. Add tofu, liquid aminos/coconut aminos & garlic. Mix.
  3. Add spinach. Warm up on stove (medium low heat) for approx 3 minutes. Stir frequently while heating. (if no stove, microwave for 30 secs). Serve.
