This is the vegetarian of the Vietnamese Gluten Free Noodle Salad. Just as delicious.
  • 2 squares of Star Anise Foods' Gluten Free Noodles - Just Noodles
  • ¼ pounds of fried tofu, thinly sliced
  • 1 lime cut into wedges
  • ½ cup of chopped coriander
  • ½ cucumber, thinly sliced
  • 1 red sweet pepper, thinly sliced
  • 1 clove of finely chopped garlic
  • Salt & pepper to taste
  • 1 teaspoon of brown sugar
  1. Prepare the Vietnamese Brown Rice Noodles as per instructions on the package. In a big salad bowl, squeeze the lime juice, put the sugar, garlic, salt, pepper and mix well. Add noodles, tofu, cucumber, red sweet pepper and mix through. Garnish with chopped coriander. Enjoy.
